Mise en Place

Four components. Oyster on ice, shallot vinegar, horseradish snow, caviar spoon. All to hand.

Method — four moves

Shuck. Dress. Crown. Pass. Total elapsed time from ticket to plate: forty seconds.

  1. Shuck. Oyster on cloth, hinge to the palm. Enter with the tip of the shell knife, twist once, sever the adductor. Preserve every drop of liquor. Loosen the meat.
  2. Dress. ½ teaspoon of aged mignonette across the oyster — never in a pool at the edge. The vinegar should sit under the meat, not on top.
  3. Crown. Grate a fine horseradish snow across the oyster (three passes maximum). Place a single osetra pearl at the widest point of the shell, using the mother-of-pearl spoon.
  4. Pass. Onto crushed ice or a chilled slate. Seaweed-salt sprinkle around the shell (not on the oyster). No lemon. No pepper. Never.

Training Notes & Common Failures

  • ×Chipped shell. Knife entered at wrong angle. Always at the hinge — never the lip. Practice on 100 oysters before service.
  • ×Lost liquor. Oyster tilted during shuck. Level cloth, level palm, level shell. Every drop matters.
  • ×Too much mignonette. Dressing pools at shell edge = failure. Half a teaspoon UNDER the meat, never over.
  • ×Caviar placed on lip. Osetra on the shell rim looks amateur and slides off. Widest point of the flesh, always.
  • ×Ice melts before pass. Coupelle not pre-chilled. Coupelles held in freezer at –5 °C, out only at ticket call.
